Almost as surprising to me as the fact that I consider myself an athlete, is that I’m beginning to believe I can cook! And I would rather cook (or prepare from what is already cooked) a meal at home than eat out about 90% of the time.

How did I get to this place? Like any worthwhile accomplishment it has taken time and patience and grace and effort. Mostly it has come as a complete surprise. I never set a goal to become a cook. But once I set goals towards eating real foods, it became pretty clear that those real foods would be more likely to come from my kitchen than from a fast food window!

I remember while reading Robb Wolf’s book, The Paleo Solution, being “encouraged” by him to “get your fanny in the kitchen and cook!” I have found a couple of go-to websites (Whole 9 and Everyday Paleo) which provide easy and delicious meals made with simple ingredients. A couple of the recipes I make again and again. (Chicken Chili Soup is a favorite!) And then on occasion I try something new and decide whether or not to put it in the rotation. Tonight’s is definitely a keeper! 

I’m blessed with a hubby who has become my Paleo Pal. He is great to grill grass-fed franks and burgers each weekend so that we have easy to reach for meal starters all week long. And he actually likes grocery shopping! I don’t get it! But I’m so grateful. Thanks, Phillip!
